Easy Keto Pizza

This great keto pizza uses my Best Simple Keto Pizza Crust. It uses classic pizza toppings. No pizza sauce needed — just tomato paste, pepperoni, and cheese.

Easy Keto Pizza

You will need

Equipment

  • Spoon (just a regular spoon you eat with, big or small.)
  • To bake in a regular oven
    • Pizza pan, cookie sheet, or other flat pan
      • Don’t have a shallow baking pan? Just turn a deep pan upside down.
  • To bake in a pizza oven
    • 7″ square of parchment paper (from making the crust)

Ingredients

  • One Best Simple Keto Pizza Crust
    • Fresh and hot is best, or you can make it ahead of time.
  • Heaping spoonful of tomato paste
  • Handful of shredded mozzarella cheese (about 1/3 cup)
  • 6 or 7 slices of pepperoni slices
  • Grated or shredded hard cheese: Parmesan, Asiago, Romano, or anything of that type.

Steps

  1. Preheat oven to 450
  2. Spread a thin layer of tomato paste over the pizza crust.
  3. Cover with the mozzarella.
  4. Arrange the pepperoni.
  5. Sprinkle some grated hard cheese over top. You can also use more shredded mozz, as in the image.
  6. Place in oven.
    • Regular oven: put pizza on pan.
    • Pizza oven: put pizza on parchment square.
  7. Bake three to five minutes. Keep checking. Take out when it looks just right!

Broiler option

This gives you the best pizza of all, but it’s really easy to screw it up. Broilers broil fast when they get going. Here’s all you need to do:

  1. Put the oven rack in the middle position.
  2. Turn the broiler on low.
  3. Assemble your pizza.
  4. Put it on the pan.
  5. Put it in the oven.
  6. Check inside after 40 seconds.
  7. Keep checking every 10 seconds. (I’m not kidding.)
  8. Be ready to pluck it out as soon as it looks wonderful.
  9. Ten seconds later it would have been a charred slab.
