How to Bake Bread

When you learn to bake, you can say goodbye to calcium propionate, sodium alginate and all those other conditioners and preservatives you’ll find in a factory loaf. You can use real butter or olive oil, not hydrogenated soybean or cottonseed oil. If your yeast needs a little sugar to get it going, you can use sugar — not HFCS (high-fructose corn syrup), which is responsible for so many of our current health woes.

If you restrict your carbohydrates, as I do, when you do make an exception, you want it to be worth it, right?
