Kurt was traveling through Seattle’s iconic Pike Place Market in 2002 when he saw a long-time tenant had closed his shop. He phoned the landlord, went back to his office, and said that they were going into the cheesemaking business. 

The Pike Place Market site, a hotspot for fresh food and artisan things in Seattle, allowed for almost encircling the cheesemaking facility with windows, allowing for a live presentation of all three concepts. 

Cheesemaking equipment was acquired piece by piece to fit inside the 1,000-square-foot glass-walled kitchen shortly after obtaining the property.
